I made a pancake roll-up for National Pancake Day! It was simple and glori-ous :)
1/2 scoop whey protein powder (mine has 30g protein for a full scoop, so use about 15g protein for yours; my flavor is Cookie Dough so that’s why there are dark cookie crumbs in the pancake)
2 egg whites
1 TBSP natural peanut butter
30g oats blend (I use Roger’s Steel Cut Porridge Oats)
1 ripe banana
Whisk the protein powder and egg whites together. Over medium heat in a non-stick pan, pour the batter. Cook until golden brown on both sides.
Meanwhile, boil hot water, then pour over the oats. Allow to sit a minute or so.
Place the cooked pancake on a plate. Spread the peanut butter on the pancake, leave room at the edges. Add the cooked oats on top of the PB.
Slice the banana and place the slices in a line down the centre of the pancake. Roll both sides up. Enjoy!
